INGREDIENTS:
- 500g vegan gnocchi
- 2 tablespoons olive oil
-1 small onion, finely chopped
- 2 cloves garlic, minced
-400ml plant-based cream
- 150g grated vegan mozzarella
-50g vegan parmesan, grated
- 1 teaspoon smoked paprika
- 1 teaspoon mustard
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish- 1 red chilli, thinly sliced, for garnish
Method:
1. Preheat your oven to 200°C (390°F).
2. In a large pan, heat the oliveI over medium heat.Sauté the onion and garlic until translucent, about 3minutes.
3. Add the plant-based cream, smoked paprika,mustard, and half of tgrated vegan cheeses to t pan. Stir until the cheese melts intocream,creating a smooth sauce. Season with salt andpepper.
4. Cook the gnocchi in boiling water according to thepackage instructions, then drain and add to thecheese sauce, mixing gently to coat.5. Transfer the gnocchi and sauce mixture to a baking dish. Sprinkle over the remaining vegan mozzarellaand parmesan.
6. Bake in the preheated oven for 20-25 minutes, until the top is golden and bubbling.
7. Let the bake sit for 5 minutes before serving.Garnish with fresh parsley and red chilli slices for anextra kick.
