For the Herb Potatoes

  • 1 1/2 lb (680 g) baby potatoes, halved if large
  • 2 tablespoons (28 g) butter
  • 1 tablespoon (15 ml) olive oil
  • 2 garlic cloves, finely minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste

For the Fresh Greens

  • 4 cups (120 g) mixed salad greens
  • 1 tablespoon (15 ml) extra-virgin olive oil
  • 2 teaspoons (10 ml) fresh lemon juice
  • Salt and black pepper, to taste

Step-by-Step Instructions

  1. Cook the potatoes: Place the baby potatoes in a saucepan and cover with salted water. Bring to a boil and cook for 12–15 minutes, or until easily pierced with a fork. Drain thoroughly.
  2. Prepare the chicken: Slice especially thick chicken breasts horizontally if necessary. Place each piece between sheets of parchment paper and gently pound to an even thickness of about 1/4 inch (6 mm). Season both sides with salt, black pepper, garlic powder and paprika.
  3. Prepare the breading: Place the flour in one shallow dish. Whisk the eggs with water in a second dish. Combine the breadcrumbs and oregano in a third dish.
