For the Grilled Chicken:

For the Tzatziki Sauce:

1/4 cup cucumber, finely grated and squeezed dry

1 tablespoon chopped fresh dill or parsley

Instructions
Step 1: Marinate and Grill the Chicken

In a bowl, combine olive oil, paprika, garlic powder, oregano, cumin, salt, black pepper, and lemon juice.

Coat chicken breasts evenly with the marinade.

Let sit for at least 30 minutes (up to 2 hours) to soak up flavor.

Heat grill or skillet over medium-high heat.

Grill chicken for 6–7 minutes per side, until golden brown and cooked through (internal temp 165°F / 74°C).

Let rest for 5 minutes before slicing thinly.
Tip: Marinating longer = deeper flavor. Always rest the meat before slicing to keep it juicy.
Step 2: Make the Tzatziki Sauce

In a bowl, mix:

1/2 cup Greek yogurt

1/4 cup grated cucumber (squeeze out excess water)

1 tablespoon lemon juice
-
1 tablespoon olive oil
-
Minced garlic
-
Fresh dill or parsley

Stir until creamy.

Season with salt and pepper to taste.

Chill in the fridge while prepping the rest of the bowl.
Tip: Letting tzatziki sit for 10+ minutes makes it even more flavorful as the garlic and herbs infuse.
Step 3: Prep the Vegetables

Slice cucumbers into thin rounds.

Halve cherry tomatoes.

Slice the red onion thin.

Slice the yellow bell pepper.

Rough chop the fresh parsley.
Tip: If raw onion is too sharp for you, soak slices in ice water for 5 minutes to mellow the flavor.
Step 4: Assemble the Bowls

In each serving bowl:

Start with a base of fresh parsley and/or lettuce if you like.

Arrange sliced cucumbers, halved tomatoes, yellow bell peppers, red onions, and Kalamata olives in sections around the bowl.

Place sliced grilled chicken in the center.
