Ingredients

For the Vegetable Stir-Fry:

  • 1 tablespoon olive oil or avocado oil

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 1 small red onion, sliced

  • 1 carrot, julienned or grated

  • 1 cup shredded green cabbage

  • 2 cloves garlic, minced

  • 1 tablespoon soy sauce or tamari

  • 1 teaspoon chili flakes or fresh chopped chili (optional)

  • Salt and pepper, to taste

  • Handful of fresh herbs (parsley or cilantro), chopped

For the Crispy Potatoes:

  • 2 medium potatoes, thinly sliced (mandoline recommended)

  • 1½ tablespoons olive oil

  • Salt, to taste

  • Optional: pinch of smoked paprika or garlic powder for added flavor

Instructions

Step 1: Prep and Bake the Crispy Potatoes

  1. Preheat the oven to 400°F (200°C).

  2. Toss thinly sliced potatoes in olive oil, salt, and any desired seasonings.

  3. Spread in a single layer on a parchment-lined baking sheet.

  4. Roast for 20–25 minutes or until golden and crispy, flipping halfway through.

Step 2: Cook the Vegetable Stir-Fry

  1. In a large skillet or wok, heat oil over medium-high heat.

  2. Add onions, bell peppers, and carrots. Cook for 4–5 minutes, stirring occasionally.

  3. Add cabbage, garlic, soy sauce, and chili flakes. Cook for another 3–4 minutes, or until vegetables are tender but still vibrant.

  4. Season with salt and pepper to taste. Stir in chopped herbs just before serving.

Step 3: Assemble the Bowl

  • Spoon the hot veggie stir-fry into a serving bowl.

  • Top generously with the crispy roasted potato slices.

  • Add an extra sprinkle of herbs or chili if desired.

Tips and Variations

  • Make it a meal: Add tofu, tempeh, or chickpeas for a protein boost.

  • Go spicy: Add sriracha, hot sauce, or a pinch of cayenne.

  • Add crunch: Top with roasted nuts or seeds (like sesame or sunflower) for extra texture.

  • Try different veggies: Mushrooms, zucchini, or kale work well too.

Storage and Reheating

  • The stir-fry keeps well in the fridge for up to 3 days.

  • Store potatoes separately to keep them crispy.
